Meat is an important food on the daily dining table. Pork, mutton, and beef are three important choices. In order to ensure the safety of pork, a traditional blue badge system on the surface of pork skin has been adopted to supervise pigs. Because of the unclear "dynamic badge" and "quality badge", forgeries are simple and easy to make. This creates loopholes in the supervision of criminals and causes diseases, resulting in the death of pork, private slaughtering of pigs, water injected pigs, and other problems of pork into the market.


Meat food safety is in urgent need of a safe and effective method that is easy to implement, convenient to be implanted into the existing regulatory system, and where the identification information cannot easily fall off or be lost. This will improve the organisational and informational level of meat circulation and enhance the ability of food safety guarantee.


Since 2010, the Ministry of Commerce has been conducting a pilot project of a "traceability system construction of meat and vegetable circulation" in cities with conditions. On the basis of the pilot work, the Code for Application of SB/T10570-2010 Laser Burning Marking Code for Pork was issued, which is intended to guide the development and technological progress of the industry. According to the specifications of 6, 1, 3 and 2, “the laser cauterisation should be applied to the front, middle, and back of each pig.” Laser carving is a permanent mark on the skin of a pig. What kind of laser should be selected among all lasers?


The demand for meat surface marking is large, so the laser with mature industrial application technology should be selected. The mature industrial lasers include CO2 ramming lasers in mid-infrared band, near-infrared fiber lasers, semiconductor lasers, end-pumped lasers, visible-band semiconductor lasers, He-Ne lasers, end-pumped lasers, ultraviolet-band end-pumped ultraviolet lasers and so on. There are many inexpensive mature lasers to choose from. Among them, the infrared wavelength CO2 ramming laser is easy to be absorbed by organic substances when it is used as pigskin marker. Water in pigskin absorbs laser quickly and efficiently, which produces thermal effect, causes collagen shrinkage, discolouration of pigskin surface, gasification of some tissues, and concave formation. The effect is ideal.

In 2017, Shenzhen issued the guiding document of "Quarantine Mark for Burning Sliced Pork". The following requirements were made for the content of the marking:
In the guidance document, the requirement of the appearance of laser burning content are put forward: the engraving pattern should indented, clear and identifiable, have a uniform colour, and no local excessive burning.


Different slaughterhouses treat pigs at different rates. Taking Shenzhen pork laser marking as an example, if the processing speed is less than 400 pieces per hour, 100 W ~ 200 W CO2 ramming RF laser should be selected; if the processing speed of pork is more than 600 pieces, 300 W CO2 ramming RF laser should be selected.

If we consider mutton and beef to promote laser marking, the demand for laser burning in the whole meat market will be expanded even further.



It can be concluded that CO2 rammed RF laser will play an important role in meat food safety, and it has broad application prospects in meat food safety labelling.
